The following tomato, carrot and avocado salad is made up of three ingredients only and you can sprinkle a little salt to add flavour. It is low in calories and will provide you with many nutrients.
Salads are great and go well with most meals. They are packed with lots of nutrients and are very refreshing. They can be prepared as a mixture of fresh vegetables like carrots, lettuce and spinach. They can also be made using a mixture of vegetables and fruits like pineapples, bananas, grapes and avocado.
- 2 fresh diced tomatoes
- 1 grated carrot
- 1 medium sized avocado
- Pinch of salt
- Wash all the fruits and vegetables and chop them up in a bowl.
- Add a pinch of salt mix well.

Tomatoes are good sources of vitamins A & C, calcium, potassium, magnesium and phosphorous. They are fruits and do not contain cholesterol hence help in regulating blood pressure.
Carrots are rich in vitamins A, C, K, B8, pantothenic acid, folate, potassium, iron, copper, and manganese. They help in improving eyesight. They can be grated and blended alone to make carrot juice or mixed with other fruits to make delicious fruit drinks.
Avocados are rich in fiber, vitamins K, B6, C and E, copper, potassium and folic acid. They contain carotenoids and monounsaturated fats and are heart friendly.
It is highly recommended to eat at least one salad everyday. The salad can help in weight loss when eaten before meals because it makes you feel full and therefore you end up eating less food.
